We salt and sun-cure whole lemons for weeks until their skins turn tender and their flavour deepens, then fold in a measured kick of chilli. Tangy, bright and a little fiery, this achar wakes up rice, khichdi and parathas alike. Oil-free, preservative-free, and made the way our grandmothers did.
